Last minute recipe for the holidays
1.5 lbs of grapes
2 delicata squash
¼ cup olive oil
2 oz parm cheese, shredded
¼ cup potatoes
Salt and pepper to taste
1 tbs balsamic vinegar
Step 1 Preheat oven to 450 °F
Step 2 Cut squash into rounds and remove seeds. Add just 2 tbs of the olive oil over the squash with some salt and pepper.
Step 3 Separate the grapes into smaller sections. Add additional 2 tbs of the olive oil with a little more salt and pepper
Step 4 Into the oven the grapes and squash go, the squash on the top rack and the grapes on the bottom.
Step 5 Take the squash out to flip and place them back in the oven until tender and lightly browned.
Step 6 Continue to roast grapes while flipping squash for about 7 more minutes.
Step 7 Once done; add all ingredients to a large bowl. Top it off with some more salt and pepper and balsamic vinegar.
