The holidays come quickly and suddenly. Planning for this gathering, wrapping that present, giving back to the community, cooking something appetizing for the work Christmas party. This time of the year can come with many experiences, emotions, and tasks, but there can also be a peace. A stillness. An awe of wonder. Here is a simple yet delectable Breakfast Cookie to share with friends and family during the Christmas season!
Breakfast Christmas Cookie
(adapted from Shauna Niequist)
Soak your dehydrated coconut first in 1 1/3 cup warm water for 15 minutes and drain in a colander pressing out the extra liquid.
In a large bowl mash the Bananas with a fork then add the coconut oil and vanilla
Add the oats, almond meal, salt, and baking powder, and stir until combined.
Add the coconut, walnuts and cranberries and stir again.
Form the dough into 12 balls on a parchment-lined baking sheet and flatten them a little bit.
Baking at 350 for 14 to 16 minutes.
