A Breakfast Treat for the Holidays
The holidays come quickly and suddenly. Planning for this gathering, wrapping that present, giving back to the community, cooking something appetizing for the work Christmas party. This time of the year can come with many experiences, emotions, and tasks, but there can also be a peace. A stillness. An awe of wonder. Let us remind ourselves that there is hope for the great things to come, and the each new day is a promise of that. Even in the chaos of all the to dos! Here is a simple yet delectable Breakfast Cookie to share with friends and family during the Christmas season! Breakfast Christmas Cookie (adapted from Shauna Niequist)
- 3 Large Ripe Bananas
- 1/4 Cup Coconut Oil, warmed just a little so isn't solid or alternatively, Olive oil
- 1 teaspoon Vanilla
- 2 Cups Rolled Oats
- 2/3 Cup Almond Meal
- 1/2 Teaspoon Sea Salt
- 1/2 tsp of Baking Powder
- 2/3 Cup Shredded Coconut- If dehydrated soak coconut in 1 1/3 cup warm water and drain.
- 1/2 Cup Chopped Walnuts, or Cashews, or Pecans
- 1/4 Cup Dried Cranberries or Raisins
Soak your dehydrated coconut first in 1 1/3 cup warm water for 15 minutes and drain in a colander pressing out the extra liquid. In a large bowl mash the Bananas with a fork then add the coconut oil and vanilla Add the oats, almond meal, salt, and baking powder, and stir until combined. Add the coconut, walnuts and cranberries and stir again. Form the dough into 12 balls on a parchment-lined baking sheet and flatten them a little bit. Baking at 350 for 14 to 16 minutes.
